To ensure that smoke and fumes are not a nuisance, the grill is designed to utilize the energy from the briquettes to create a couple of central vortices – and why is this important?! The energy from the briquettes is not sufficient to vent the smoke and fumes by ‘raw power’. However, it is sufficient, once the vortices have gathered the smoke and fumes, to guide them away and further out through the flue! The underside of the grate is simultaneously brushed by the smoke on its way out, giving you that tasteful characteristic grill flavour.
